1 t. olive oil
6 oz. (1 link) spicy smoked sausage, diced (about 11/2 c.)
1 green bell pepper, cored seeded and diced (about 11/2 c.)
1 med. onion, diced (about 11/2c.)
2 stalks celery, diced (about 1 c.)
2 green onions, minced
1 (16 oz.) bag brown lentils, rinsed under cold running water
2 t. Cajun seasoning blend
10 c. water
1 (14.5 oz.) can diced tomatoes
1/2 t. garlic powder
1/2 t. thyme leaves1 t. salt

In a large kettle, heat the olive oil over medium heat. Add the sausage, green pepper, onion, celery and green onion and cook over medium to medium low heat for 10-12 min. Vegetables should "sweat" not brown. adjust heat lower if vegetables start to brown.
Add lentils, Cajun seasoning blend, water, diced tomatoes,garlic powder thyme. Stir well. Bring to a boil, reduce heat to a simmer and cover. Cook 11/2 hours, or until lentils are soft. Add more water if necessary. Stir in salt.

This can also be cooked in the crock pot. Also good for using some of those lentils in your food storage.
