Ingredients: 1 t. olive oil 6 oz. (1 link) spicy smoked sausage, diced (about 11/2 c.) 1 green bell pepper, cored seeded and diced (about 11/2 c.) 1 med. onion, diced (about 11/2c.) 2 stalks celery, diced (about 1 c.) 2 green onions, minced 1 (16 oz.) bag brown lentils, rinsed under cold running water 2 t. Cajun seasoning blend 10 c. water 1 (14.5 oz.) can diced tomatoes 1/2 t. garlic powder 1/2 t. thyme leaves1 t. salt

Directions:In a large kettle, heat the olive oil over medium heat. Add the sausage, green pepper, onion, celery and green onion and cook over medium to medium low heat for 10-12 min. Vegetables should "sweat" not brown. adjust heat lower if vegetables start to brown. Add lentils, Cajun seasoning blend, water, diced tomatoes,garlic powder thyme. Stir well. Bring to a boil, reduce heat to a simmer and cover. Cook 11/2 hours, or until lentils are soft. Add more water if necessary. Stir in salt. |
