16oz Bag of Dried Pinto Beans
6" of Pepperoni Stick, cut into 1/2" chunks
1 Lg. Yellow Onion
4 C. of Chicken or Beef Stock
1 Bay Leaf
1 Tbl. Kosher Salt
1 tsp. Black Pepper
1 tsp. Dried Oregano

Directions:
Sort and soak dried beans overnight in 3 qts of water. Place soaked beans in large pot with all ingredients. Simmer for atleast 3 hours. Make sure you have enough liquid to use a food processor/blend stick to mix all ingredients into a paste. After processing, pour into a deep baking dish and bake at 375 degrees for 1-2 hours or until beans have thickened to desired consistency.
