2 TBSP butter
1 TBSP vegetable oil
1 diced carrot
2 diced celery stalks
1 cup sliced mushrooms (or 1 can)
2 cups chopped cooked chicken
3 - 4 cups cooked (cold) white rice
salt and pepper to taste
2 tsp onion powder
1 tsp garlic powder
2 TBSP soya sauce
2 - 3 TBSP hoisin sauce
1 tsp minced garlic
4 green onions (cut into 1/2 inch pieces)

Heat butter and oil in a large nonstick pan or wok. Add diced carrots and celery and stir fry for 3 - 4 minutes. Add mushrooms for another 2 minutes. Add in cooked chicken and heat through 4 - 5 minutes. Add cooked rice and heat through 3 - 4 minutes. Add in seasonings and sauces, garlic, and green onions. Mix well, heat thoroughly, and serve.

Any type of left over chicken will do, BBQ drumsticks, roast chicken, chicken breasts, etc.
Any type of white rice, long or short grain, basmati or jasmine can be used as well.
Use any fresh, frozen, or leftover vegetables you have on hand.
