1 can (49 oz.) chicken broth
1 (10 oz.) pkg. fresh spinach, roughly chopped
2 cans (14 1/2 oz. each) diced Italian tomatoes
1 (9 oz.) pkg refrigerated cheese tortellini
1/2 tsp. dried oregano
1/2 tsp. salt
freshly ground black pepper, to taste
grated Parmesan cheese (for garnish)
4 or 5 sliced fresh mushrooms (optional)

Directions:

Combine all ingredients except cheese in large soup pot. Bring to boil uncovered and simmer uncovered for 15 minutes. (Keeping pot uncovered will keep the spinach a bright green color.) (That is the soup pot that I am talking about!!!)
Serve in bowls, pass cheese separately.
