2 ¾ cup All-purpose Flour
¼ tsp Baking Soda
¼ tsp Salt
1 cup (2 sticks) REAL BUTTER (NO SUBSTITUTION!), softened
¾ cup Granulated Sugar
1 Large Egg
1 tsp Vanilla Extract

Directions:
Directions:
In small bowl, combine flour, baking soda, and salt.
In large bowl, with mixer on medium speed, beat butter and sugar 1 minute or until creamy.
Scrape down mixing bowl with spatula.
Add egg and vanilla; beat until well mixed.
Scrape down mixing bowl with spatula.
Gradually beat in flour mixture until blended.

Divide dough in half and flatten into 2 small disks.
Place each disk of dough on plastic wrap and seal.
Refrigerate dough for at least 2 hours or overnight.

Preheat oven 350°.
Roll out one disk of dough at a time on floured surface.
Be sure dough is at least 1/8 inch thick.
Cut with cookie cutter.
Place cookies 1 inch apart on ungreased cookie sheet (use an Air Bake Cookie Sheet, if possible).
(Using egg whites from 1 egg, brush cookies with whites and sprinkle with sugar crystals, if desired.)

Bake cookies for 11 minutes.
Allow to cool on cookie sheet for 2 minutes before transferring to cooling rack.
Icing cookies when completely cooled.
