1 whole ham (Choose a high quality ham, not one with a lot of water added)
1 c. apple juice
1 c. brown sugar
10 to 15 whole cloves
Basting Glaze:
½ c. apple juice
1 c. brown sugar
1 c. honey

Cut whole ham in half. With a sharp knife, score the ham on top and bottom in a cross-hatched pattern (each score should be cut in a shallow, narrow “V” pattern. Press a whole clove into the ham, with a clove in each diamond shape from the cross-hatch pattern. Mix the apple juice and the brown sugar in the bottom of a 14 inch deep Dutch oven (A standard depth oven does not work well because of the size of the ham. A small ham can be cooked in a 12 inch deep oven). Cook for 1 ½ hours, with a medium hot oven (28 briquettes – 14 up and 14 down). Baste every 15 to 20 minutes scooping the sauce in the bottom of the oven and pouring over the ham. Turn the ham halves over carefully so as not to knock out the cloves after 45 minutes. For the last 2 bastings, use basting glaze (with honey) prepared outside the pot.
Cook in a small oven or cast iron kettle over low heat (6 to 10 briquettes) for ½ hour, or until thickened. Baste ham at least 2 times before serving.
