Ingredients:  
1/2-3/4 cups butter
Chopped fine in a food chopper:
1/2 cup carrots
1/2 cup celery
1/2 cup onions
1/2 cup flour
1/2 tsp Dry Mustard
2 1/2 pints chicken stock (fresh, canned, or disolved base)
6 oz Sharp cheddar cheese, coarse grated
2 Tbs Grated Parmesan cheese
1 11 oz bottle of beer
Salt & pepper to taste

Directions:
Directions:
Saute vegetables in melted butter until tender, but not browned.
Blend in flour and dry mustard, then add stock and cook for 5 minutes.
Blend in cheeses, then add beer.
Let simmer for ten minutes. Season to taste with salt & pepper.

Serve with crusty French bread and a tossed salad. Um, Um good!
