1 3-lb. pot roast
beef marinade (see recipe in index)
1 14-oz. can beef broth
8 sm. red potatoes, whole with skins
1/2 lb. carrots (baby or cut)
1 med. onion, sliced

Directions:
Directions:
Rub roast with beef marinade. Cover and refrigerate for 3-4 hours. Place roast and beef broth in a deep 9" x 13" sprayed roasting pan. Cover with foil and cook for two hours in 300º oven. Remove from oven and distribute potatoes and carrots around the sides of the roast, placing onions on top. Return to oven and bake an additional hour.
