5 lbs peeled Russet Potatoes washed
1 medium yellow onion chopped
2 cups broccoli flowerlets (trimmed to bite size pieces)
32 oz. chicken broth
1 pint heavy cream
1 stick butter
1 cup crispy bacon optional but tasty
salt and pepper to taste
garlic powder to taste
celery salt to taste
2 Table spoons dried parleys flakes

Chop onions, dice potatoes, wash broccoli, put all in stock pot on medium heat. Add broth and let cook until potatoes are tender. Add all seanonings to taste. Turn off heat then add heavy cream and stick of butter. I serve this soup with cheddar cheese on top.

Over my life as a mother I have made versions of this soup for my family and they have loved it. Lindsay told me she loves my Cheesy Potato Soup but I have never known which version she loves. Now when she says that I will make this version because I have finally written the recipe down for others to use. Enjoy!
