¼ cup butter
4 medium stalks celery, sliced (2 cups)
1 large onion, chopped (1 cup)
2 med. carrots, coarsely chopped (2 cups)
¼ cup + 2 tbsp. flour
1 tsp. salt
½ tsp. pepper
3 cups cooked wild rice
2 cups water
2 (10.5 oz) condensed chicken broth
3 cups half-and-half
2/3 cup slivered almonds, toasted, if desired
½ cup chopped fresh parsley
2 cups cooked chicken breast, chopped

In a 4-quart saucepan or Dutch oven, melt butter over medium-high heat. Cook celery, carrots and onion in butter about 10 minutes, stirring frequently until crisp-tender. Stir in flour, salt and pepper. Stir in wild rice, water and broth. Heat to boiling; reduce heat. Cover; simmer 15 minutes, stirring occasionally. Stir in half-and-half, almonds and parsley. Heat just until hot (do not boil or soup may curdle).

(may need to add additional salt if using reduced sodium chicken broth; salt to taste)
