4 T unsalted butter
4 c. chopped onions (2 lg)
1/4 c. flour
1/4 t. grated nutmeg
1 c. heavy cream
2 c. milk
3 lb frozen chopped spinach defrosted
about 5 10 oz pkg
1 c. fresh grated Parmesan
2 t. BVI SEASONING
1/2 c. grated Gruyere

Oven 425º
Melt butter over med heat saute pan. Saute onions until translucent, about 15 min. Add flour and nutmeg and cook, stir for 2 more min. Add cream and milk and cook until thick.

Squeeze liquid from spinach and add to sauce. Add 1/2 c. Parmesan and mix well. Season with salt and pepper.

Transfer to baking dish and sprinkle remaining 1/2 c. Parmesan and the Gruyere on top. Bake 20 min until hot and bubbly. Serve immediately.
