1/4 C. white flour
1/4 C. whole wheat flour
1/2 C. cornmeal
1/4 C. cornstarch
1/2 tsp. salt
1/2 tsp. baking powder
1/4 tsp. baking soda
1 1/2 tsp. sugar
3/4 C. buttermilk
1/4 C. milk
3 Tbsp. canola oil
1 egg , separated

Directions:
Directions:
Beat egg white to soft peak. Set aside. Stir together dry ingredients. Mix egg yolk, oil, milk and buttermilk together. Add to dry ingredients. Fold in beaten egg white. Pour mixture into preheated waffle iron. Cook till golden brown. Keep warm on oven rack in 250º oven till ready to serve.
