2 15 oz cans cannellini beans rinsed and drained
1 green pepper diced
1 red onion sliced thin
1/4 c chopped fresh parsley
1/3 c white wine vinegar
3/4 c olive oil
1 clove garlic minced
1 T chopped fresh chives
1/2 t pepper
Salt to taste

Directions:
Directions:
Combine beans, green pepper, onion,
and parsley in a bowl. Blend together remaining ingredients and pour over bean mixture. Mix thoroughly. Cover and chill well.
