Ingredients: 2 tsp. Asian five-spice powder 1 tsp. pepper 1 lb boneless chicken thighs/breasts 2 tsp. Olive Oil 2 large cloves garlic, finely chopped 1 L or 3 cans low-sodium chicken broth 1 tbsp. soy sauce 1 package angel hair pasta or rice vermicelli 1 bag baby spinach 1 package fresh mushrooms - chopped Green onion (chopped) optional

Directions:1. Combine five-spice powder, pepper in a bowl. Rinse chicken; pat dry with paper towel. Cut into 1 inch pieces. Rub spices onto chicken.
2. Heat oil in large soup pot. Add chicken and cook over medium-high heat until browned on all sides, about 5 minutes.
3. Add garlic to pot and cook until fragrant. Stir in chopped mushrooms & onion until wilted. Add chicken broth and soy sauce; cover and bring to a boil. Uncover, reduce heat to a simmer and cook 3 minutes. Add pasta; simmer 1 minute. Add spinach; stir just until wilted. Add more spices to taste, I find some of the chicken broth brands really bland so I have to spice it up some times.
Enjoy with fresh biscuits or scones. |
