4 small boneless chicken breast half (1/4 in. thick)
6 tbsp. butter (divided)
1/2 cup finely grated Asiago
8 thin slices prosciutto (folded in half crosswise)
2/3 cup dry white wine
2 tsp. minced fresh sage
3 whole sage leaves (for garnish)

Sprink breast with salt and pepper. Coat both sides with flour. Shake off excess. Melt 4 tbsp. butter in large skilled over medium heat. Saute breasts until brown. Turn once (5 minutes). Transfer to baking sheet. Reserve skillet. Sprinkle 2 tbsp. cheese over each breast. Top with two prosciutto slices. Bake until chicken is cooked through (about 5 minutes). Meanwhile add wine, minced sage and 2 tbsp. butter to skillet. Boil until sauce is reduced to 1/3 cup. Scrape up browned bits (about 4 minutes). Transfer breasts to platter, top with sage leaf, drizzle pan sauce over top and serve.
