1 lb box of penne pasta (whole wheat works great)
2-3 large chicken breasts cut into bite sized pieces
12 oz. bottle of Cardini's Ceasar Salad Dressing
1 cup grated parmesan cheese
1 head of romaine lettuce

Directions:
Directions:
Spray skilllet with cooking spray (Pam) and saute chicken pieces until caramelized or browned. Cook pasta according to directions, making sure not to overcook. While pasta is cooking you can wash and tear up the romaine lettuce. Make sure it is dry after washing. Drain pasta and pour into a arge bowl. Add all the other ingredients (including the lettuce) to the pasta and mix.

I use more lettuce and much less pasta to keep the carb count down. I also have just topped each serving with the parmesan instead of putting it in the bowl to lower calories. Great as a meal and served with garlic breadsticks. Tastes just as good cold.
