1/4 cup butter
1/3 cup onion, MINCED
1/4 cup celery, MINCED
1/4 cup green bell pepper, MINCED
1 teaspoon garlic
1/2 teaspoon cayenne
1 egg, MEDIUM RAW
1/2 pound crab meat, PICKED
1/4 pound shrimp, MINCED
1/2 cup bread crumbs
24 shrimp, LARGE DEVEINED
1/2 pound shortening

Directions:
Directions:
Saute finely minced vegetables in butter until translucent. Add seasonings and simmer until soft. Combine with the remaining stuffing ingredients and mix well. Slit the large shrimp along the back and open them for stuffing. Pat dry with paper towels and fill the cavities with stuffing. Dip in tempura batter and deep fry in the shortening until golden brown. Drain and salt. Serve immediately as the batter won't stay crisp for very long.
