2 cups sugar
2 tsp baking soda
1 tsp salt
4 eggs
2 cups flour
2 tsp cinnamon
1 cup canola oil
3 cups grated carrots
3/4 cup of chopped walnuts
1/2 cup crushed pineapple

Frosting:
1 lb confectionery sugar
2 tsp vanilla
1/2 cup butter
8 oz cream cheese

Directions:
Directions:
Mix and sift all the dry ingredients. Add oil and stir well. Add eggs one at a time. Mix well after each egg. Then stir in carrots, nuts and pineapple. Grease and flour 2 9in layer pans or one 9x13 pan. Bake at 350º for 30-35 minutes.

Frost when cool
