8-6 inch tortillas
½ c chopped onion
4 cloves garlic minced
1 tsp ground coriander
¼ tsp pepper
2 Tbsp margarine or butter
3 Tbsp flour
8 oz (1 cup) sour cream
2 c chicken broth
1 or 2 cans jalapeño chili peppers (optional, I usually leave out for my family)
2 c cooked chicken (I usually boil the chicken and then shred it)
I c Mozzarella cheese (I usually ad more then a cup, we like cheese
Directions:
Directions:
Pre-heat oven to 350 and spray casserole dish with non stick spray and set aside. Sauce-cook onion, garlic, coriander and pepper in margarine. In the mean time stir flour into sour cream. When onions are cooked ad sour cream mix to it. Stir in broth and peppers, cook until thick and bubbly. Remove from heat and ad half of the cheese. Stir in some of the sauce with the shredded chicken. Fill tortillas with chicken mixture, roll and put in casserole dish, finish with remaining tortillas. Poor the remaining sauce over them and ad the rest of the cheese. Cook for 35-30 min, remove the cover and cook for additional 5-10 min.
