5 lbs potatoes, peeled and cut into 1/4 inch slices
1 med onion chopped
1 tsp celery seed
1 1/2-2 cups apple cider vinegar
1 1/2 cups Splenda
6-12 slices bacon (depending on the amount of fat you want in the salad)
2 tsp salt
1/2 tsp pepper
3 T cornstarch
2 cans chicken broth

Directions:
Boil potatoes in salted water until fork tender. Drain and set aside in a large size bowl. Fry bacon until crispy in a large skillet and remove the slices from the skillet. Add the onion and lightly saute. Drain bacon grease from the pan, leaving the onion in the pan. Remove pan from heat and add chicken broth, Splenda, salt, cornstarch and pepper...blending well.Add celery seed and 1 1/2 cups vinegar for sweeter salad OR 2 cups vinegar for a tangy salad. Return to heat and bring to a boil, cooking until thickened and clear. This usually takes approx 5 minutes. Stir often to prevent sticking. Pour over potatoes. Add crumbled bacon and mix well but gently.

This can be made a day or so before serving. Put it in a crock pot on low to warm prior to serving, but it does take a few hours to heat through. The healthy version tastes just as good as the traditional.
