3 pita bread loaves (cut into cubes & toasted or fried)
1 head romaine lettuce (chopped)
2 medium cucumbers (quartered & sliced)
2 tomatoes (chopped in small cubes)
1 red bell pepper (chopped small)
1 green bell pepper(chopped small)
1 small onion (chopped in small cubes)
1 bunch scallions (chopped small)
1 bunch parsley (chopped)
1 clove garlic (crushed)
½ cup olive oil
2 lemons (juiced) OR ¼ cup vinegar
1 small bunch green mint (chopped) or 1 tsp dried mint
salt and pepper to taste.

Directions:

Place in a large salad bowl all of the chopped vegetables. Combine vinegar, salt, pepper, lemon juice, garlic, oil, mint. Mix well add in the toasted pita.Toss and serve.
