18 lbs ground beef, elk, moose other
6 lbs pork
5 tsp garlic powder
3 tsp nutmeg
4 tsp pepper
6 tsp onion powder
6 cups water ice cold
2/3 cup tender quick
coriander seeds (crushed)

Directions:

Mix all ingredients well, let sit overnight to cure. Form into patties or stuff in sausage casings. Can smoke or cook fresh.
