1 lb ground turkey burger
1 onion, finely chopped
1 bell pepper (any color), finely chopped
mushrooms, sliced (optional)
1 10 3/4 oz can tomato puree
1/4 c. water
2 T. Dijon mustard
3 T. loosely packed brown sugar
1/2 t. garlic powder
1/4 t. cayenne pepper
1/2 t. salt
1/2 t. freshly ground black pepper
4 to 6 whole-wheat hamburger buns

Heat large skillet over medium-high heat.
Add ground turkey burger and partially brown, then add onion, peppers & mushrooms. Cook & stir till meat is thoroughly cooked and veggies are tender. If there is any liquid in the pan, you can drain it.
Next stir in the tomato puree, water, Dijon mustard, brown sugar, garlic powder, cayenne, salt & pepper, cover and simmer gently for 10 to 15 minutes over low heat until heated through.

Divide mixture among the buns and serve hot.

You can toast the buns under a broiler or leave them soft. You may like to substitute or add other veggies and seasonings of your choice.
