Low Country Egg Rolls Recipe

12 Egg Roll Skins
2 c cooked black eyed peas
1 c finely diced country ham
1 c cooked and chopped collard greens
1 medium onion diced
2 tsp. red pepper flakes
1/4 c rice wine vinegar
1/4 c oil
Salt and Pepper to taste

Directions:
Directions:
Saute onions in oil until soft. Add country ham and cook over medium heat until ham starts to brown - approximately 5 minutes. Add peas and collards toss to coat, cook 5 minutes. Add vinegar, salt, pepper and red pepper flakes and toss well. Cook until most of the liquid evaporates. Drain well and cool completely. Divide mix into 12 portions and roll in egg roll skins. Then deep fry until golden brown.
