4 chicken breast, skinless and boneless,
4 whole Ortega Chilis or roast your own Pasilla or New Mexican Chilis,
4 slices of Jack or Cheddar cheese,
1 egg,
Flour and bread crumbs,
Seasoning.

Directions:
Directions:
Pound out chicken breast to uniform thickness, about 1/4 inch thick, lightly season. Top with chili, then cheese. Roll and secure with toothpick. Dust with flour, dip in beaten egg, roll in bread crumbs and lightly season again. Place in baking dish, bake in 375º or so oven for about 45 minutes.
