(Kibbeh Shell Mixture )
1 lb lean beef or lamb (ground twice)
1 lb fine cracked wheat (bulgur #1) washed and drained
½ cup farina
2 tsp salt
1 tsp black pepper
1 small onion (coarsely chopped)
1 tsp cumin
2 tsp all-spice
6 tbs butter
(Ice water used to knead the kibbeh with)

(The Stuffing)
1 lb ground beef
1 large onion (diced small)
3 tbs butter
1 tsp all-spice
1/2 tsp black pepper
1 tsp salt
1/4 cup walnuts toasted if you prefer

(The Kibbeh Mixture)
In a food processor add the washed bulgur, salt, coarsely chopped onion, cumin, all-spice, and grind it all up. Add a few tbsps of water if its hard to grind. Add the meat to the bulgur and grind more, until the mixture combined.

Butter 2 tbs into 12X14 inch baking pan. Divide the kibbeh mixture into 2 portions. Flatten half the amount of kibbeh mixture in a prepared pan and press it down. Wet your hand in a bowl of cold water and smooth it out. Spread the reserved filling over the bottom layer evenly.

Now make a second layer over the filling by flattening the remaining kibbeh on your palm piece by piece and pressing them next to each other and not separated. Wet your hand again and seal the kebbeh evenly and smooth. Use a butter knife and make a square shape and cut it all the way down to the kebbeh. Then press each square in the center with the knife and run your wet knife along the side of the tray. Place the 4 tbs of butter on top of each square of kebbeh.

Bake on 400º oven for 30 minutes until golden in color. Take the tray out of the oven and rest for 5 minutes. Serve next to any side of salad.

(The Filling)
Sauté the walnuts (or the nuts you prefer) then add the beef and brown it. Add the chopped onion, salt, pepper, butter, all-spice mix until all the mixture is cooked. Set aside to cool.
