2/3 cups oil plus 1/3 cup of applesauce for a lower fat version
1 ½ cups sugar
½ cup egg substitute
1 tsp. vanilla
1 tsp. baking soda
1 ½ tsp. cinnamon
3 cups flour
5 cups apples
Cooking spray


Topping:
2-3 Tbsp. sugar
2 tsp. cinnamon

Directions:
Directions:
Combine the oil (or oil and applesauce), sugar, egg substitute, and vanilla. Blend well.

Add baking soda, cinnamon, and flour (mixture will be stiff).

Peel and chop apples to equal 5 cups. A firm, tart apple makes a better cake. Add the apples in with the other mixture and mix on low until the apples wet the dough to give it a more cake-like consistency.

Spray a 9 x 13 inch pan. Pour in dough and top with 2 to 3 tablespoons of sugar mixed with 2 teaspoons of cinnamon. Bake at 350º F for 40 to 50 minutes or until a toothpick inserted in the center comes out clean.
