2 eggs – beaten
1 can cream style corn
1 can whole kernel corn (with juice)
1 box jiffy corn bread mix
1 stick margarine, melted
1 cup sour cream (reduced fat is fine)
Salt & pepper to taste
1 cup Monterey or mozzarella cheese


Directions:
Directions:
Mix all ingredients (except cheese) together and put in casserole dish. Top with Monterey or mozzarella cheese. Bake one hour at 350o, uncovered.

We always had this for Thanksgiving dinner as our vegetable when I was growing up. It continues as a tradition today.
