1 med. head cauliflower
2 Tbsp. butter
1 Tbsp. flour
Salt & pepper
¾ cup milk (or water in which the cauliflower was cooked)
½ cup bread crumbs (divided)
1 egg yolk
1 cup grated cheddar
2 egg whites

Directions:
Directions:
Divide cauliflower in florets. Cook in boiling water till tender, set aside. Heat butter in a saucepan and stir in flour and salt & pepper. Gradually stir in milk (or water). Stir until smooth. Heat to boiling. Remove from heat. Stir in ¼ c. bread crumbs, egg yolk, cheese and cauliflower. Set aside. Beat egg whites until stiff, fold into cauliflower mixture. Turn into greased casserole. Sprinkle with remaining crumbs. Bake 400° - 30 min.
