1 lb. button mushrooms
¼ cup vegetable oil
1 tsp. sugar
1 tsp. low sodium soy sauce
1 Tbsp, oyster sauce
2 Tbsp. sherry

Directions:
Directions:

Clean mushrooms by quickly washing them in cold water and drying them thoroughly. In a large non stick skillet, heat oil and stir fry mushrooms until evenly coated. Add in sugar, soy sauce, oyster sauce, and sherry. Cook over medium high heat until sauce is reduced and turns a shiny dark brown. Allow 20-30 minutes for the reducing to occur. Serve warm. (Eating out of the pan will burn your mouth; so let them cool a little.)

I learned this recipe in a Chinese cooking class taught by Dora Wang over 25 years ago. It is still a favorite.
