2 T. extra virgin olive oil (evoo)
2 T. unsalted butter
1 lg. diced onion
4 minced garlics cloves
2 chicken breasts, diced and browned (optionaly you can substitute 1 lg. can tuna, drained)
2 c. sliced mushrooms
1-13oz can artichoke hearts,drained & chopped
black pepper
dash cayenne pepper
2 c. heavy cream (or half & half)
2 T. dijon mustard
fresh rosemary
1 c. frozen peas, thawed (optional
2 T. chopped parsley for garnish
1 box multi grain penne pasta, cooked & drained
1/2 c. grated gruyere cheese grated

In a large sauce pan heat evoo & butter over medium-heat. When hot add onion & garlic, saute until soft, 5 minutes. Add chicken (or tuna). Add mushrooms, artichoke hearts, black pepper & cayenne pepper, mix well.
Add cream & dijon mustard, simmer over low heat until reduced to a creamy consistency, 15 minutes.
DO NOT BOIL. Add peas & cooked pasta. Garnish with parsley & grated cheese.
