1 pkg. dry yeast
1/4 cup warm water
1 cup cottage cheese, heated lukewarm
2 Tbsp sugar
1 Tbsp instant minced onion
1 Tbsp butter or margarine
2 tsp. dill seed
1 tsp. salt
1/4 tsp. baking soda
1 unbeaten egg
2 1/4 to 2 1/2 cups flour

Soften yeast in the water. Combine in mixing bowl cheese, sugar, onion, butter, dill seed, salt, baking soda, egg, and softened yeast. Add flour to form a stiff dough, beating well after each addition. (For first addition of flour, use mixer on low speed.) Cover. Let rise in warm place (85º to 90º) until light and doubled in size (50-60 min.)

Stir down dough; turn into well-greased 8" round 1 1/2 - 2 quart casserole. Let rise until light (30-40 min.) Bake at 350º for 40 - 50 min. until golden brown. Brush with soft butter and sprinkle with salt.

Don't let the cottage cheese fool you, this bread is DE-licious! I remember Mother (Kathryn Diel) making this bread for special occasions in her thick cookware casserole dishes. It is definitely one of my favorites!
