"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

1 c. corn syrup
1/2 c. water
2 egg whites (room temp)
1 tsp. vanilla
-cherries and pecans - optional

Directions:
Directions:
Mix sugar, corn syrup, and water in a pot and bring to a boil. Cover for 3 minutes, or until the steam has melted off the crystals on the sides of the pot. Remove lid and cook until the spoon creates long thread (approx. 254º).
While cooking, on the side in a large oil/grease free bowl, beat the egg whites to stiff peaks. Then, slowly add a small stream of the candy mixture from it's pot into the the bowl of egg whites with beaters. Do not scrape the pan. Beat until thick, but do not over mix. The divinity will just start to lose it's luster, so stop immediately. Add coloring, cherries or nuts at this time if wanted; Drop by spoonful on wax paper.
Store in an airtight container.

Personal Notes:
Mom taught me how to make this and toffee when I was off track in 5th grade. I still love to make it every once in a while, and I always get compliments on it. You taught me well, Mom!
