1 c. softened butter
1/2 c. white sugar
2 1/2 c. sifted flour

1. In a mixer, cream softened butter (I always used salted) and white sugar 'till fluffy.
2. Mix in shifted flour (measure first, then sift!!!). Dough will be stiff and crumbly.
I usually then place it in a large ziplock bag and work the bag until I have a large disk.
3. Once dough is (mostly) together, generously flour your counter and a rolling pin, then roll disk out to about 1/4" thickness.
4. Use the rim of a glass or a biscuit cutter to cut out rounds.
5. Use a spatula to transfer to an ungreased cookie sheet (I use parchment on mine, but its not necessary). Don't try to pick up with your hands!!
6. Prick each cookie several times (like 5-7) with the tines of a fork to allow steam to release or they will puff up a bit.
7. Roll out dough scraps to get every last morsel into a cookie, and repeat.
8. Bake at 300 degrees for 25-30 minutes.
They should not really change color, although some of the thinner one may turn a little bit golden around the edges. Leave on sheet until cool, or they may break when you move them.
