1 1/2 cups chopped pecans
2 cups sugar
1 stick butter
1 3/4 cups syrup
1 cup Half and Half
1 cup whipping cream
1 tsp vanilla

3 squares unsweetened Bakers chocolate (for chocolate caramels)

Cut sheet of waxed paper to 37". Fold it in half again, and again, and again. Cut along the folds to form 32 squares of paper for wrapping caramels later. Add 2 cups of sugar to large pot with 1 stick of butter and 1 3/4 cup of syrup. Add 1 cup of equal parts half and half and whipping cream. Save the rest for later. Turn stove on to medium heat. Let it cook till it boils. When boiling gradually, add the remaining cream allowing boiling to continue. Let it cook for a while until thermometer reads approximately 240º. If making chocolate caramels, add chocolate after boiling. When it is thick enough it should clump off the spoon, not drip. Take thermometer off and turn off stove. Add 1 tsp vanilla and the 1 1/2 cups chopped pecans. Stir. Pour into square pan and refrigerate overnight. Once they have hardened you can remove from the pan in sections. Cut with sharp knife into squares and wrap in waxed paper like little packages.
