1 1/2 c. margarine 3/4 c. packed brown sugar
3 eggs, separated 1 1/2 tsp vanilla
3 c. flour 3/4 tsp salt
2 1/4 c. finely chopped nuts (walnuts or pecans)
Tinted powdered sugar icing
Icing -
3 3/4 Tbsp Margarine or butter
2 1/4 c. powdered sugar
2 1/4 Tbsp Cream (I use evaporated milk or Coffee Rich)
1 1/2 tsp vanilla

Directions:
Directions:
Heat oven to 350º. Mix margarine, sugar, egg yolk and vanilla thoroughly. Mix flour and salt, and add to margarine mixture. Roll dough into balls - 1 tsp dough per ball. Beat egg white slightly with fork, and dip balls into egg white. Roll in nuts. Place about 1" apart on ungreased cookie sheet. Press thumb gently in center of each. Bake 10 minutes until set. Cool. (Sometimes I press my thumb back into indentation while cookies are still warm). Fill thumbprints with tinted icing or chocolate kiss.
Icing -
Blend margarine and sugar. Stir in cream and vanilla until smooth (add more powdered sugar as needed for right consistency). Tint desired color.
