2 whole chicken breasts
1 cup pancake mix
1 tsp salt
1 tsp parsley
2 tsp chopped chives
1/2 tsp thyme
1/2 tsp tarragon
1/4 tsp dry mustard
1/4 tsp hot sauce
2/3 cup milk

Directions:
Directions:
Split, skin and bone breasts and cut into 1 to 1 1/2 inch squares
Combine pancake mix, salt, spices and dry mustard. Stir in hot sauce with milk and add to dry mixture. Sitr until smooth. ( Batter will be thick, if too thick add a small amount of milk to thin consistency) Dip chicken squares into mixture and drop into deep fat heated to 340º to 350º. Fry about 5 minutes or until golden brown on all sides
