3/4 c. rolled oats 3/4 c. all-purpose flour
1/2 tsp baking soda 1/4 tsp salt
8 Tbsp unsalted butter 1/3 c. granulated sugar
1/3 c. brown sugar, 1/2 tsp vanilla extract
lump-free 1 lg egg
1 c. coarsely chopped
Macadamia nuts
1 c. white chocolate chips

Directions:

Pulverize the oats in the processor or blender until fine. Add the flour, baking soda and salt, and pulse to combine. Set aside. Cut the butter into chunks and melt in a large saucepan over medium heat. Remove from the heat and stir in the granulated sugar, brown sugar and vanilla. Whisk in the egg. Stir in the flour mixture just until all the dry ingredients are moistened. Let the mixture cool for a few minutes if it's warm. Stir in the nuts and chocolate chips. Cover and refrigerate at least 6 hours. Preheat the oven to 325º. Remove the dough from the refrigerator and allow to soften. Scoop rounded tablespoons of dough and place about 2 in. apart on the cookie sheets. Bake for 13 to 15 minutes or until cookies are golden brown.
