1/2 c. prepared chicken broth
1/4 c. smooth peanut butter
2 tbsp. sweet chili sauce
2 tbsp. coconut milk
4 tsp. lime juice
1 tbsp. rice vinegar
1 tbsp. Hoisin sauce
1 1/2 tsp. finely grated ginger (or 1/4 tsp. ground ginger)
1/4 tsp. pepper
1 lb. pork/beef tenderloin, trimmed of fat and cut into 1/4 inch slices

Rice noodles
1 head chopped ice berg lettuce
3 carrots, grated
1 large cucumber, thinly sliced
1 c. green onion, chopped
bean sprouts
1/2 c. chopped peanuts

Process first 9 ingredients in blender until smooth. Reserve half of the mixture in a small bowl for sauce. Chill.

Put meat into large resealable freezer bag. Add remaining broth mixture and turn until coated. Let marinate in refrigerator for three hours, turning occasionally. Drain.

Thread meat onto skewers. Place on greased broiler pan. Broil on top rack in oven for about 2 minutes per side until desired doneness. Warm remaining sauce in the microwave or on stove.

Divide the vegetables evenly into four bowls. Add meat and sauce, and top with chopped peanuts.

You can also saute the satay...rather than broil it and cook the remaining sauce in with the meat.

This recipe also works well with shrimp. Vegetable broth can be substituted for chicken broth.
