2 T's butter, 4 tsp's all p flour, 1 1/4 milk, 1/4 tsp salt, pepper, just a pinch of nutmeg. This is for the sauce.

1 15 ounce whole milk ricotta cheese, 1 10 ounce package of chopped spinach, squeezed and dried, 1 cup grated Parmesan, any type thin cut meats, chopped, 1 large egg, beat to blend, salt to taste, 1-2 T's olive oil. 12 or so, uncooked lasagna noodles, 2 cups marinara sauce, 1 cup shredded mozzarella.

Sauce, melt butter in a heavy pan over med heat. add flour and whisk until you like what you see. 30 seconds to 5 hours, that is your choice. Whisk the milk in to the sauce,. increase heat, it will thicken. Add salt and pepper to taste. then the nutmeg.
preheat the oven.............450.
Whisk ricotta, spinach, 1 cup parmesan, any meat choice or not in your favorite bowl.
Boil water, add oil, and the noodles. cook the noodles until just done, still firm to feel. Separate the noodles on a sheet to prevent them from sticking together.
Butter a large cooking dish. pour some of the sauce on the bottom and spread the stuff around. Lay the noodles on a smooth surface and spread your filling from end to end, being careful not to over spread. place each roll sideways in your baking dish,. spoon the sauce over the rolls. Sprinkle the mozzarella and parmesan over the tops. Tightly cover with foil. Bake until the sauce bubbles, maybe 15-20 minutes. Pull it out. Let stand. Heat the remaining sauce, serve along the port or starboard side.

This has proven to be a great appetizer. You get the idea, your imagination is the zone that night. Just be careful to not over fill the wraps.
