1/4 c butter
1 onion, chopped
1 carrot, peeled and shredded
1/2 c flour
6-8 c chicken broth
6.2 oz pkg long grain and wild rice mix, cooked
1 c cooked chicken breast, cubed
1/4 t salt
1/4 t pepper
1 c evaporated milk
1/4 c chives, snipped

Directions:
Directions:
Melt butter in large saucepan over medium heat. Add onion, carrot, and celery, cook until tender. Stir in flour until blended; gradually add broth. Stir in cooked rice, chicken, salt, and pepper. Bring to a boil over medium heat; cook and stir for 2 minutes. Add evaporated milk. Sprinkle with chives. Serves 10
