2 ripe Haas Avocadoes
2 stems green onion
1 med. size ripe tomato
2 Tbsp. lemon juice

Directions:
Directions:
Dice the tomatoes and green onion; set aside. Cut the avocadoes in half, length-wise; push the pits up and out. Gently make thin, length-wise slices through the avocado halves within the skin; then make thin horizontal cross-slices. Scoop the chopped up avocado out of the skin with a soup spoon and place in a small mixing bowl. Run your knife through and through the avocado bits in the bowl, thereby making very small chunks. Add the lemon juice. Use a fork to mash the chunks until only somewhat lumpy. We do not use a blender or food processor; too much precious avocado gets lost on the machine. Add the tomato and onion; mix well. Serve with your favorite tortilla chips.
