3 T rice wine vinegar
3 T honey
2 T Tamari
1/2-1 T hot sauce
2 T sesame oil
1 T canola oil
salt and freshly ground pepper to taste
2-inch piece of fresh ginger, grated
1 large clove garlic, grated or finely chopped
1 c shelled frozen edamame, defrosted
1/2-1 head (depending of size) Napa or Savoy cabbage, shredded
1 small red bell pepper, thinly sliced
1/4 cucumber, halved lengthwise then thinly sliced
1-2 carrots finely shredded
4 scallions, very thinly sliced on an angle
3 T toasted sesame seeds
OPTIONAL - may add crispy noodles or chicken breast

In a large bowl, combine vinegar, honey, Tamari, hot sauce, oil, salt, pepper, ginger and garlic. Add in the edamame, cabbage, pepper, cucumber, carrots, scallions and optional items if using. Toss to coat and garnish with sesame seeds.
