2 cups flour
1 1/4 tsp. baking powder
1 tsp. salt
2/3 cup shortening
ice water

Filling:
4 eggs
slightly less than 2 cups sugar
1/2 tsp. salt
1 tsp. nutmeg
1 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp. allspice
1 tsp. vanilla
1 large can pumpkin (Libby's is best)
slightly less than a full can of evaporated milk.

Crust:
Combine flour, baking powder, and salt in a large bowl. Cut in shortening with a pastry cutter. Slowly add ice water until dough holds together. Use a large piece of wax paper as work surface - sprinkle minimum amount of flour on work surface and roll into 13" inch circle. Flip the dough into a pie shell and peel off waxed paper. Crimp edges with fingers, and trim off excess dough. Combine excess dough with remaining dough and repeat to form second pie shell. Set aside.

Filling:
Mix eggs and sugar. Add spices and vanilla and mix well. Slowly add pumpkin and mix well. Slowly add evaporated milk and mix well. Pour into 2 pie shells
Bake 400º 45 minutes. The top of pies should appear "set" when wiggled, maybe just starting to crack.
