2 1/2 cups cake flour
3 tsp baking powder
1 tsp salt
1 1/2 cups sugar
1/2 cup shortening
1 cup milk
1 tsp vanilla
2 eggs unbeaten

Directions:
Directions:
Stir shortening to soften. Add dry ingredients and 3/4 cup milk. Mix until all the flour is dampened. Then beat for 2 minutes. Add eggs and remaining 1/4 cup milk and beat 1 minute longer.
Cook at 375º for 20-25 minutes for layers or 30 minutes for 13x9 sheet cake. Ice when cool.

This was THE Birthday Cake that my mother made for every birthday. She put chopped pecans in the icing between the layers. My cake always had pink icing.
