Ingredients:  
1/2 c. flour
2 eggs (lightly beaten)
2 c. dry bread crumbs
1 T. minced fresh basil
1/2 tsp. dried oregano
1/2 tsp. salt
1/2 tsp. white pepper
1 large eggplant peeled and cut into 1/2 in. slices
4 T. olive oil
One 25 oz. jar of marinara sauce
1/2 c. grated Parmesan cheese

Directions:

Mix all together and bake at 350º covered for 15 minutes. Remove cover and continue baking for 5-10 minutes longer.
