6 peaches, peeled and sliced
4 tbsp. superfine sugar (or regular will do)
1/2 tbsp. lemon juice
1 1/2 tsp. cornstarch
1/2 tsp. almond extract (vanilla will do in a pinch)

Cobbler Topping:
1 1/4 cups flour
1/2 cup superfine sugar (or regular)
1 1/2 tsp. baking powder
1/2 tsp. salt
6 tbsp. butter, diced into tiny pieces
1 egg
5-6 tbsp. milk

Directions:
Directions:
Put peaches into 9" X 9" glass baking dish. Add sugar, lemon juice, cornstarch, and almond extract and toss together. Bake 20 minutes at 425º.
While that is baking, make topping. Stir flour, baking powder and salt into a bowl. Rub in the butter with your fingertips until it resembles fine breadcrumbs. Combine egg and milk in a small bowl and add to mixture. Mix until a soft sticky dough forms. If it seems dry, add a little more milk. Reduce oven to 400º. Remove peaches and drop spoonfuls of dough on top (or use ice cream scoop). Bake 15 more minutes. If doubled, increase to 25 minutes.
