2 C. Milk
6 Tbl. Sugar
6 Egg yolks

Directions:
Scald vanilla bean, milk and sugar on stovetop. Temper with egg. (Meaning slowly add milk mixture to bowl with eggs to bring egg temperature up to milk temperature without cooking the eggs.
Put over dbl broiler (put water in saucepot and bring to simmer, place stainless steel bowl over saucepot to heat indirectly) and heat while whisking until it thickened, approx 4-5 minutes.
