2 C. Sugar
1 C. Marg or veg oil
3 Eggs
3 tsp. Vanilla extract
2 C. Grated Zucchini
3 C. Flour
1 tsp. salt
1 tsp. baking powder
3 tsp. Cinnamon
1/2 C. nuts
1/2-1C. Raisins

Directions:
Directions:
Beat eggs in a large bowl. Then, add sugar and beat until well mixed. Add zucchini and oil to the bowl next. Beat that mixture well. Sift dry ingredients in a separate bowl. After sifting, add all dry ingredients to the wet mixture bowl. Add vanilla next and stir in. Stir in nuts finally. Bake in 2 greased and floured loaf pans at 350 for 45-55 min.
