1 onion-chopped
2 lb: ground chicken, beef or turkey
1 can ea: black beans, pinto beans, great northern beans
2 can: shoe peg corn
2 can: rotel tomato and green chili
1 packet Ranch mix
1 packet Taco seasoning
2 C. water

Directions:
Directions:
Sweat onion in large stock pot. Add chicken and cook through. Then add all canned ingredients and water. Mix in pkt of ranch mix and taco seasoning. Stir well. Let simmer for approx 1-1.5 hr.

You can adjust the spiciness with by changing rotel and taco seasoning heat. Also, you can add jalapenos to the pot or dried peppers or cayenne.

To serve: top with shredded cheddar, a dallop of sour cream and Frito's.
